Homemade Tart Frozen Yogurt

Ingredients

  • Base: Plain, full-fat Greek yogurt (e.g., Fage or similar unsweetened brand) – 2 cups
  • Optional: Regular plain yogurt – ½ cup (for a lighter texture)
  • Tart Booster: Fresh lemon juice – 1-2 teaspoons (adjust to taste) or citric acid – a pinch (optional)
  • Sweetener (Optional): Sugar, honey, or a sugar substitute (e.g., allulose) – 1-2 tablespoons per cup of yogurt (adjust to taste)

Instructions

  1. Mix the Base: In a bowl, combine the Greek yogurt (and regular yogurt, if using) until smooth.
  2. Add Tartness: Stir in the lemon juice or citric acid, starting with a small amount and tasting as you go to reach your desired tartness level.
  3. Sweeten (Optional): If the tartness is too strong, add your chosen sweetener a little at a time, mixing well and tasting until balanced. Keep it minimal to preserve the tang.
  4. Churn:
  5. With an Ice Cream Maker: Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions (typically 20-30 minutes) until it’s thick and scoopable.
  6. Without an Ice Cream Maker: Pour the mixture into a shallow container and place it in the freezer. Stir every 30 minutes with a fork or whisk to break up ice crystals, repeating for 2-3 hours until it reaches a scoopable consistency.
  7. Serve: For the best texture, let the frozen yogurt soften slightly (5-10 minutes) before scooping. Enjoy as is or with toppings like popping boba!

Notes

  • Full-fat yogurt gives a creamier result, but you can use low-fat if preferred—just expect a slightly icier texture.
  • For an even smoother finish, blend the mixture before churning or freezing.
  • Store leftovers in an airtight container in the freezer for up to a week; cover the surface with plastic wrap to prevent ice buildup.
